Food Chemistry

This course covers the chemical composition and physical and sensory properties of foods with an emphasis on the structural considerations of food components (water in foods, lipids, carbohydrates, and proteins), chemicals in foods, browning reactions, and food flavors. Prerequisite: CHM 213.
